An estuary kitchen in a Georgian house
Devon produce, formal service and the long arc of a country-house restaurant set the discipline at Lympstone Manor. The restaurant works inside a Grade II listed Georgian manor, built mainly in the 1760s around an older farmhouse structure, on a 28-acre estate above the Exe Estuary. Once Courtlands House, owned by the banker Charles Baring, it gained verandas, the Lady's Walk, parkland planting and a walled garden in the Picturesque manner, then passed through later owners who left the Regency stylings largely intact.
By the 21st century the property had fallen into disrepair. It was bought in September 2015 and reopened in April 2017 after restoration, with the restaurant earning a Michelin star within six months. The kitchen's centre is modern British fine dining with a French-trained grammar: sauces, foams, seafood, orchard fruit, beef from nearby farms, and an insistence that the plate answer to the place outside the windows.
Seven courses from the waterline
The Estuary Tasting Menu runs to 7 seafood-focused courses; the Signature Tasting Menu runs to 8. Those numbers matter because the work here is paced, not piled up. Langoustine cannelloni arrives with braised fennel and shellfish sauce. A quail's egg tartlet carries onion confit, black truffle, smoked bacon and light quail jus. Braised turbot draws River Exe mussels, cockles, tomato and basil into the same frame, while chocolate orange confit mousse closes with orange confit sorbet.
The approach is seasonal, and the best dishes read as a set of controlled decisions rather than flourishes. Seafood stays close to the estuary. Beef comes from Darts Farm. Bread is made in house. Sauces carry the classical line, but the produce pulls the cooking back toward Devon. The dining formats, tasting menu, à la carte and prix fixe, all sit around that same discipline: a kitchen using the South West larder without loosening the formality of the pass, and beginning each meal with canapés in the Lounge Bar.
A cellar planted into the slope
Wine is not a side program here. The estate planted 17,500 vines in 2018 across a 10-acre vineyard, and the first Triassic Pinot Noir release followed in 2022. The cellar holds over 600 bins, with estate wines sitting beside a broader global list. That gives the sommelier team room to move between place and counterpoint: sparkling wine before canapés, a seafood pairing shaped to the estuary, a red from the slope rather than from habit.
The vineyard also changes the way the manor reads. This is not only a restored country house with a restaurant inside it; it is a house trying to make its own agricultural argument. The vines face the Exe, the menus return to the water, and the cellar keeps both in view.
The room holds its line
The room is quiet, formal and light-filled, with multiple dining rooms looking over the estuary. Georgian proportions and old-fashioned decor give the service a slightly ceremonial frame, while the food keeps moving through canapés, bread, fish, meat, orchard fruit and chocolate. Nothing about the room asks to be hurried. The pass carries the energy; the house absorbs it.
