    Island ingredients held close

The decision starts with the product: Peter Merriman works as chef at Merriman’s in Kapalua with island farmers, ranchers and fishermen shaping the station before a pan heats. At the point between Kapalua Bay and Napili Bay, his kitchen carries the same argument he has made across Hawaii dining for decades, that place is not decoration for a menu, it is the method. Peter Merriman came to Hawaii restaurant work after the University of Pennsylvania, then learned the pace of hotel kitchens as a cook at Mauna Lani Bay Hotel from 1983. By 1985, he was Executive Chef at Gallery Restaurant at Mauna Lani Resort, with more authority over the pass and a sharper sense of what island cooking could hold. His later role as Founding President at Hawaii Regional Cuisine put that conviction into a wider structure, linking chefs to growers, fisheries and the islands’ own food identity. At Kapalua, where he has been owner and chef since 2008, the lineage stays practical: mainland technique, Hawaii product, and a restaurant built to keep those two pressures in contact service after service.

    Ninety percent from nearby hands

The kitchen’s clearest measure is the one the restaurant makes public: at least 90% of its products come from local farmers, ranchers and fishermen. That figure gives the menu its discipline. Wok-Charred ’Ahi, Macadamia Nut-Crusted Fresh Catch and Dirt Grown Salads are not treated as island flourishes; they are the working vocabulary of the place, direct dishes that ask the product to carry weight. Merriman’s own cooking has long favored that restraint. His signature Seared Ahi Steak sits in the same register, built around clarity rather than excess. The Point Lounge extends the program without loosening it, with Hawaiian ’Ahi Poke set beside house-made Moloka’i Sweet Potato Chips and a Merriman’s Mai Tai finished with honey-lilikoi foam. Even the wine list follows a maker’s logic, leaning toward small-scale family wineries using sustainable, organic and biodynamic methods. The point is not abundance for its own sake. It is selection, repeated until it becomes a house habit.

The room at the edge of Kapalua Bay

During service, the room works with the water in view. The dining room is open-air and covered, set on the oceanfront point with sightlines toward Kapalua Bay, Lana’i and Moloka’i; the room does not need to announce the setting because the setting keeps entering the meal. Plates move from the pass into a polished but relaxed floor, while the bar and Point Lounge hold a looser station nearby. Live music runs every evening, another pulse under the cut of fish, the clink of glass and the steady turning of tables. The restaurant also functions as a wedding venue, but the craft of the place remains the same on an ordinary night: keep the product close, keep the technique clean, and let the room carry the island without turning it into scenery.

    A movement kept in service

Merriman was inducted into the Hawaii Restaurant Association Hall of Fame in 2011, a recognition tied to a career that helped give Hawaii Regional Cuisine its public shape. At Merriman’s Kapalua, that history does not sit apart from the evening’s work. It returns in the farmer’s delivery, the fish on the station, the wine chosen for scale and method, and the restraint around Wok-Charred ’Ahi.
