A kitchen built from a question
Jock Zonfrillo made Orana in Adelaide his working room as founder and chef, returning to one question at the pass: why could he not taste Australia in Australia? The question came after a trip that left him saying, “I went back to Europe after this trip and kept thinking and thinking and asking myself why Australia was the only country I had visited where I could not taste anything about the culture of the country.” Orana gave that inquiry a fixed address on Rundle Street. His apprenticeship in pressure had begun in 1994 at Marco Pierre White's restaurant at the Hyde Park Hotel in London, where pace and intent were not optional. From 2000 to 2013, he worked in Adelaide kitchens at Restaurant 41 and Magill Estate Restaurant, building the steadiness that later held Orana's tasting menu in place.
