    A drink returns to the same spec because the person behind the counter wants it that way. At Pint and Jigger in Urban Honolulu, Dave Newman works as Cocktail Service Professional, owner, and bar manager, holding a station where repetition has to stay alive rather than become automatic. Since 2012, he has carried the practical authority of the bar: the pour, the memory, the reset between guests, the standard that survives a busy room. Before that, Newman created and rolled out the Industry Sundays program at Nobu Waikīkī from 2007, a piece of program-building that asked for more than good service.
