He has been Head Chef and Culinary Director here since May 2024, after leading the kitchen at Die Speiserei im Maier in Friedrichshafen and working as creative Head Chef at PRISMA in Vitznau. At PRISMA, his cooking drew Asian inspiration through Western technique; at Pinus, the hand has turned toward Lake Constance, seasonal vegetables, herbs, fruit and flowers, with meat and fish set back as supporting notes. The room sits within Seegut Zeppelin, on the ground floor of Villa Gminder and beside the park salon of Haus Helene. Large windows bring in the garden, the black pine that gives Pinus its name, Lake Constance and, on clear days, the line of the Alps. The effect is not theatrical. Natural light does most of the work. The counter and the pass belong to an upscale casual service rhythm, conversational rather than hushed, with plates moving in and out according to the kitchen’s timing. In season, the terrace extends the same idea outdoors, closer to the protected meadows, orchards and old pines around the hotel. The setting asks the food to stay in scale with it. Heid’s best argument for the place is the small plate that can sit against that view without trying to outshout the black pine.
