Raised beside the family stills

The stills set the rhythm for Jacopo Poli, Fourth-Generation Distiller and Owner at Poli Distillerie in Schiavon (Vicenza), Italy. Born in Bassano del Grappa in 1963, he grew up beside the family apparatus rather than arriving at it as an adult with a borrowed romance for copper and vapour. That matters in a still house. The hand learns timing before it learns language for timing; it learns the smell of a cut, the patience of a slow run, the difference between stewardship and display.

Poli joined the distillery's modernisation in the 1980s and remains active in its artisanal grappa and whisky production. The family line is the only lineage the house gives plainly here: fourth generation, raised near the stills, still in post. It is enough to understand the posture of the place. Poli Distillerie is not framed around a visiting consultant or a one-release experiment. Its centre is a maker who inherited a working grammar and then helped carry it into a more contemporary distillery without removing the family hand from the method.

Grappa and whisky under one hand

The production language that can be stated with confidence is narrow, and it should stay narrow: artisanal grappa and whisky. Poli works as steward of both, which places the distillery in a discipline of translation. Grappa asks the maker to listen closely to a raw material already marked by wine; whisky asks for another patience, another sequence of fermentation, distillation and ageing. It is continuity.

Jacopo's work sits at the point where family memory meets modernisation. He did not enter the bench as a custodian of nostalgia alone; he joined the updating of the distillery in the 1980s, then stayed with the production rather than stepping away into the pure language of ownership. In a spirits house, that distinction is not cosmetic. Ownership can become distance. Here, the stated role keeps him close to the apparatus, the inherited method and the two spirits named by the house: grappa and whisky.

The still house as a family station

What can be pictured without invention is the station itself: a still house in Schiavon, in the province of Vicenza, held by a fourth-generation distiller whose biography begins in Bassano del Grappa. The room belongs to the slow work of distillation, where heat, vapour and condensation turn judgement into liquid form. Nothing about that work rewards hurry. A distiller repeats gestures until they become legible in the hands, then keeps repeating them because the material changes.

The texture of Poli Distillerie is therefore not best approached through spectacle. It sits in the quieter register of a family craft that has survived contact with modernisation. Jacopo's presence gives the place its line of sight: back to the stills he was raised beside, forward through the grappa and whisky he continues to steward.
