Rice, curry, and the hand that sets the pace
Khao Mai Yasothorn rice sits close to the curries before service, chosen for aroma and grain. Chumpol Jangprai, chef at R-Haan in Bangkok, works from that kind of decision outward. He is co-founder and executive chef here, a self-taught cook whose discipline came through repetition rather than culinary school, then through Blue Elephant in Copenhagen as a cook, Blue Elephant in Brussels as executive chef, and Blue Elephant from 2002 as worldwide corporate head chef. Since 2018, R-Haan has been the Bangkok station where he turns that long apprenticeship in Thai cooking toward a formal tasting menu. The restaurant’s Michelin recognition belongs to this house, with two stars held across 2020 to 2023, and the work remains anchored in Thai food traditions rather than translation for the room.
