Coming Up
Chumpol Jangprai’s kitchen discipline was built outside formal schooling. He trained at No culinary school (self-taught), then sharpened that base at Blue Elephant in Copenhagen as a cook, where the standard was professional pace and repetition. From there he moved to executive chef at Blue Elephant in Brussels, and in 2002 stepped into the role of worldwide corporate head chef at Blue Elephant, carrying Thai Cuisine through a larger brand structure with consistency. Since 2018, he has been co-founder and executive chef of R-Haan, where the work stays anchored in Thai food traditions while reflecting the range he built across those earlier posts.
Where They Are Now
Executive chef is the title, but the craft sits in Bangkok, where Chumpol Jangprai works in a city that keeps Thai cooking under constant scrutiny. In that setting, the task is not simply to produce plates; it is to keep memory, technique, and present-day dining expectations in balance.
Signature
His signatures sit in familiar Thai territory, with an eye on texture, balance, and restraint. Fish Jungle Curry with Riceberry and Vegetables keeps the heat and aromatic force of curry in view, while Riceberry and vegetables give the dish structure and contrast. Scallops in Coconut Cream moves softer, using seafood and coconut in a rounder register. Khai Palo points toward the kind of dish that carries weight in Thai home cooking, where comfort and cultural memory matter as much as precision. Mango sticky rice closes the set in a form that tests a kitchen’s handling of sweetness, fruit, and grain without excess.
In Their Words “I try to combine local Thai wisdom with my love for cooking.” That line names the method plainly: work from local knowledge, and keep the cooking tied to what Thai Cuisine already knows. In Chumpol Jangprai’s case, the emphasis is on ingredients, habit, and the logic passed through everyday practice, not on novelty for its own sake. The statement is direct, and the career supports it. Self-taught work tends to be built through repetition, observation, and correction, and that path for Chumpol Jangprai runs from No culinary school (self-taught) to Blue Elephant in Copenhagen, Blue Elephant in Brussels, and then into global leadership and Bangkok.
