The season sets the first cut
Ryan Cole lets the seasons set the first cut as Chef at Salsify at the Roundhouse in Camps Bay, Cape Town, South Africa, where the mountain and the Atlantic sit close enough to make the menu’s argument each day. He opened the restaurant in 2018 and remains Executive Chef and co-owner, holding the pass inside the Cape Town Roundhouse rather than treating the room as scenery. His route to this station runs through South African Chefs Academy, service in London kitchens in 2010, and a head chef post at The Test Kitchen before the Roundhouse became the long brief. The discipline is ingredient-led and spare: local produce, clarity, balance, and plates that do not lean on decoration for authority. Cole has put the standard plainly in his own words, saying food should be delicious above all else. At Salsify, that sentence is less a motto than a working method. The seasons change in front of the kitchen, and the kitchen answers with what is present.
Preservation before ornament
The program moves between tasting menu and à la carte formats, but its center is a modern South African kitchen built on seafood, local sourcing, and preservation. Coal, smoke, curing, fermentation, pickling, and preserved acidity appear as technique rather than theatre. A Coal Roasted Oyster with Ginger Butter carries the sea first; Black Mussel Amagwinya with Mango Atchar folds coastal shellfish into a familiar fried-bread gesture; Abalone with Braised Rice and Local Kombu keeps the plate close to the Cape. The kitchen has also sent out Yellowtail with Perilla and Coconut, West Coast Crayfish with Tomato and Samp, Karoo Lamb Rib and Loin with Sour Fig and Wild Garlic Dressing, and a 12-Hour Sourdough with Porcini Butter and Vegemite or Black Garlic. The Preservation Chamber makes the method visible, with the station given over to preserved things, sharpened flavors, and the long way of keeping a season in reach after it has moved on.
The room keeps its old curve
The dining room works inside a national monument whose older body still matters. The Roundhouse was built in 1786 as a guard post and later used as a hunting lodge, and Salsify keeps that history in the room without turning it into costume. White tablecloths, large windows, soft light, contemporary art, and heritage elements hold a quiet tension. The pass sends out modern plates while the old curve of the building frames Lion’s Head, Camps Bay, and the Atlantic. Service is formal but the room stays conversational, which suits food that asks for attention without asking for silence. The view is part of the work here, because Cole’s cooking keeps returning to what grows, lands, and changes around the Cape Town Roundhouse.
