In 2008, Tempelhoff worked over five Relais & Châteaux restaurants within The Collection by Liz McGrath, a kind of apprenticeship in consistency at scale. Here, that experience settles into a looser fine-dining register. The room can look across the Constantia vines without turning the landscape into decoration; the food does the closer work. Laingsburg lamb, mielie meel, Cape sorrel and native-breed beef appear in Tempelhoff’s broader Cape cooking as material, not garnish logic, and Beyond follows the same discipline of placement, season and restraint.
The program at Beyond turns on ingredients that can stand a direct method. Ostrich carpaccio is charred over coals, then set with roast onion ponzu, miso mayo and shiitake. Cape fish can arrive with chokka sofrito, mussels, squid ink gnudi, saffron rouille and bouillabaisse, a plate built from the coast outward. Kalahari beef fillet is given fermented chips, peppercorn cream and dill hollandaise; braaied lamb takes kapokbos rub, waterblommetjie bean fricassee, wood-fired cabbage, kabocha squash and sour fig.
The technique is not a display case. Braaing, pickling and fermentation give pressure to the produce, while Japanese restraint keeps the lines clean. The restaurant works between tasting menu and à la carte formats, which suits a wine-farm kitchen that has to hold both leisure and precision in the same pass. A pre-meal bite, a bread course, a main plate built for wine, a petit four at the end: the sequence matters because each station gives the next one its temperature, salt and pace. The wine program leans naturally toward Buitenverwachting and Constantia, with the cellar supporting dishes that carry smoke, fat, brine and sourness.
The glass-clad dining room gives the kitchen very little place to hide. Large wooden tables, hanging dried florals and vineyard light set a pared-back field around the pass, so a plate with Cape fish or Kalahari beef has to meet the view without competing with it. The atmosphere is conversational rather than hushed, which keeps the fine-dining grammar from stiffening. It is a room for a long lunch as much as a composed dinner.
That ease is part of the craft. Beyond opened in the first year of the pandemic with Tempelhoff, Ashley Moss and Jennifer Hugé behind it, carrying experience from Greenhouse and FYN into Constantia’s vines. The house now has an estate garden in motion, intended to bring ancient ingredients closer to the kitchen. If the next change is quiet, it will likely come from that soil first, through kapokbos, waterblommetjie or the next Cape fish leaving the pass at Beyond.
