A coastal station after New York and Dallas
The tins open at the counter with their oil left intact, and Kyle McClelland , chef of Saltie Girl - Los Angeles in Los Angeles, works from that preserved brine outward. His station on Sunset Boulevard belongs to a seafood house with East Coast memory and West Coast address, but his own route is longer than the room suggests. The base came at the French Culinary Institute in New York City, followed by line work at Ambrosia on Huntington and The Federalist at the XV Beacon Hotel in Boston. TOPPER’S at The Wauwinet in Nantucket put him in a Head Chef post. Caviar Russe in New York City put him in an Executive Chef role from 2009. Brooklyn and Dallas added partner responsibility to the bench, through Prospect, Driftwood, Proof & Pantry, Madrina, and Vicini. Saltie Girl has been the named anchor since 2016, first in the house’s Boston record and now at its Los Angeles outpost. That sequence matters because this menu asks for range without looseness: raw bar handling, New England forms, conservas service, pasta, fried work, and whole-fish restraint. McClelland’s work here reads as cumulative, not sudden. He has moved through enough rooms to know when the hand should stay visible and when the product should be left alone.
Conservas, raw shellfish, and the measured plate
The program gives tinned seafood the same seriousness another house might give a cellar. Saltie Girl is known for a conservas selection of over 100 to 150 tins, largely from Spain and Portugal, served with a set of salts, crunchy butter, piquillo pepper jam, pickled piparra peppers, and French bread. The craft is not in disguising the tin. It is in temperature, sequence, acid, fat, and the small decisions that let oil, smoke, salt, and fish hold their shape. Around that bench sits the rest of the seafood discipline: oysters, clams, scallop shooters, shrimp, lobster, sea urchin, tuna poke, and crab salad on the towers; warm and cold lobster rolls; spicy lobster spaghetti; moules frites; New England clam chowder; fried lobster and waffles; Torched Salmon Belly with Miso Glaze; Mala Salmon Donburi; a crispy fish sandwich; and French Bone-In Dover Sole. Dessert comes through Ben Sidell’s SweetBoy bakery work, with cookies, blondie brownies, and soft serve. The pass has to carry both abundance and order. Too much garnish would flatten the fish; too little structure would turn the table into a catalog.
The room around the pass
The room at 8615 Sunset Blvd sits in West Hollywood, on the Sunset Strip, with the long bar doing some of the work before a plate reaches the table. Plush seafoam green banquettes soften the inside; curved porthole windows, halo-like light fixtures, and dark wood keep the room pointed toward the sea without turning it theatrical. Outside, the patio gives the same seafood vocabulary more air. The counter is part of the experience because so much of the menu arrives as assembly with judgment: a tin opened cleanly, a roll dressed without drowning the lobster, a tower built so cold shellfish stays cold and visible. McClelland’s cooking has to meet that room, not overpower it. On the pass, conservas, Dover sole, and lobster rolls all ask for different hands in the same service.
