    Service runs formal, but the scale stays intimate. That matters for a tasting menu kitchen because the pass can read the room, not just the docket. Plates leave against the horizon of the North Sea; the counter and the glass make the work feel near, and the island outside, all windswept dunes and salt air, supplies the contrast the room is built against. The close of the meal belongs less to ceremony than to the last calibrated spoonful of Helgoland lobster bisque.
