Work built from his own hands

Whiskey gave Adam Spiegel a form of work to build and measure as founder and whiskeymaker at Sonoma County Distilling Company in Rohnert Park. He came to the bench by leaving a trade built around other people’s assets. Dickinson College came first, then financial sales in New York City from 2006 to 2008, then a Bay Area firm managing money for foundations and endowments until 2008. The turn toward distilling was a decision about proximity. Spiegel has described the pull plainly: “I really wanted to do something different. I wanted to create a business from my own two hands.”

At the distillery since 2010, he holds the two sides of the house together. Founder is not a distant title here; whiskeymaker is the working one. The business side and the making side sit in the same pair of hands, which means a production choice is never detached from the company built to carry it. That is the discipline of this place as it can be read from the outside: a maker choosing whiskey because it can be handled, measured, and owned end to end.

A whiskey program held close

The distillery’s own language sets the program around “high-quality whiskeys for discerning whiskey drinker.” It is a direct sentence, and it asks to be read as a production standard rather than a hospitality line. Whiskey does not reward vagueness. Grain, fermentation, distillation, barrel, proof and time all leave evidence, and the drinker Spiegel names is one who pays attention to that evidence in the glass.

Spiegel founded the company and makes the whiskey; the method is organized around hands-on control rather than a separated hierarchy of ownership, production and brand. In that structure, the craft is not an ornament to the business. It is the business’s reason for existing. The long way matters because whiskey gives no shortcut that survives contact with the barrel.

The still house as a working frame

A distillery is not a neutral room. Even before a visitor knows the mash bill or the shape of the still, the work sets the pace: heat, wash, cut, wood, rest. At Sonoma County Distilling Company, the known center of that pace is Spiegel’s decision to stay close to the making. The still house is the frame for a career that moved from finance into a craft where judgment has to take physical form.

That shift gives the place its texture. The language around it is not inherited cellar romance or a family line repeated for effect. It is a maker’s claim on responsibility, from the company structure to the whiskey itself. The object here is the glass that carries Adam Spiegel’s Rohnert Park whiskey.
