    Stefano Lubiana Wines

Steve Lubiana, winemaker at Stefano Lubiana Wines in Granton, keeps vineyard and cellar decisions close beside a rustic Italian osteria.

    Acidity decided in the vineyard

When a wine at Stefano Lubiana Wines in Granton needs lift, Steve Lubiana, winemaker, looks back to the vines before the cellar. His own account of the work is direct: “We’d taste the wine and think this may need more acidity, but we don’t go: ‘Let's add tartaric to it’. We go back to the vineyard and find how we improve acidity; how do we get acidity in that wine… in the vineyard!” That sentence gives the place its order of operations. The vineyard sits ahead of correction, ahead of hurry, ahead of the reflex to solve a bottle problem away from the soil that made it. Lubiana has been vigneron and proprietor at Stefano Lubiana since 1990, and he also serves as winemaker of Stefano Lubiana Wines. That continuity keeps the estate under one set of hands across seasons, with vineyard decisions and cellar decisions held close enough to answer each other. He built the house against easy scale, saying, “I didn’t want to make bulk wine, I wanted to do premium wine… especially sparkling.” At Granton, that refusal is not positioned as romance. It is the working discipline of a maker who chose premium wine over volume and kept sparkling wine in the front of the mind from the start.

    The garden beside the osteria

The place carries two kinds of appetite: the cellar’s need for time, and the osteria’s need for produce at the right point of the season. Stefano Lubiana Wines is known here as Tasmania's first certified biodynamic vineyard, paired with a rustic Italian osteria that uses produce from its own organic garden. The cooking is seasonal, set in format rather than sprawling, and the signatures are plain enough to be judged by their materials: an antipasto plate, a truffle-salted egg. Those dishes belong beside a wine program because they do not ask the table to shift registers. Salt, egg, cured and garden things, then Pinot Noir or Sasso Pinot Noir, both named in Lubiana’s own signature. The craft here is not a restaurant trying to borrow a vineyard’s atmosphere. It is a vineyard with a room for eating, and the kitchen’s restraint lets the wines keep their shape. The same logic runs through the cellar: balance and precision are built in at the source, not layered over the top when the wine is already asking a different question.

The room above the River Derwent

The room looks toward the River Derwent estuary, Mediterranean in feeling without losing the local weather in front of it. The atmosphere is rustic and relaxed, quiet enough for the table to notice the sequence of glass, plate, view, and return. The counter and pass serve food with the calm of an osteria rather than the theatre of a dining room built around spectacle. That matters in a place where the vineyard is not backdrop but method. The organic garden, the biodynamic vines, the seasonal set menu, and the wine in the glass all sit within a small, intimate scale. Nothing here needs amplification. The work has already been narrowed by choice: grow with care, cook with what is close, pour the estate in a room facing the Derwent.

A house kept to premium wine

Lubiana’s next move is not stated as expansion, and the house does not need one to make the point. The line to follow is already concrete in the bottles that carry the site forward: Stefano Lubiana Pinot Noir and Sasso Pinot Noir.
