Jesse Katz came to that station through Fresno State, then through cellar and vineyard responsibility as head winemaker at Lancaster Estate and Roth Winery. That sequence matters because The Setting asks for a winemaker who can read site before style. Katz has described his own frame as space, place, and time, in essence, terroir. At this house, that language lands in Cabernet Sauvignon rather than in a broad portfolio. The program is narrow by design, and the discipline sits in the decisions that preserve difference between vineyards rather than sanding them into a house signature.

A Cabernet program held close

The Setting Wines was cofounded in 2014 by three friends, with Katz at the winemaking bench. The work sits in the luxury boutique register: small production, sustainable sourcing, still red wine, Cabernet Sauvignon. The house is known for bottlings drawn from prestigious Napa vineyards, and the Oakville appellation gives the program a particular gravity, with Cabernet as the variety that carries both tannin and site.

Katz also founded Aperture Cellars in 2009, and his signature wines across his work include Glass Slipper Vineyard Cabernet Sauvignon, Aperture Farrow Ranch Cabernet Sauvignon, Blue Ocean Floor, Aperture Estate Farrow Ranch Sauvignon Blanc, and Montage Estate Cabernet Sauvignon. For The Setting, the method stays site-first. The cellar choices serve the vineyard, not the other way around. When the fruit comes from Oakville, the work is to keep the wine fluent in that place: structure without weight for its own sake, polish without erasing the ground beneath it.

The quiet side of the tasting room

The room around The Setting Wines is quiet by temperament: intimate, refined, and built for close attention rather than spectacle. Vineyard views do some of the work. That restraint suits Katz. His public recognition includes Forbes 30 Under 30 and Winemaker of the Year in 2025, and the discipline at the bench defines the venue.
