    Holding shape in warm summers

    The cellar decisions come back to restraint: Stuart Botha, winemaker at Tokara Winery in Stellenbosch, works from the upper slopes of Simonsberg mountain with a climate that can push fruit hard. Since 2017, he has held the Tokara station with a brief that suits the place: shape, consistency, and enough quiet tension to keep the wines from becoming heavy. Elsenburg Agricultural College gave Botha his technical grounding, and the training still reads in the way he speaks about the work, as discipline before flourish. His own line is direct: “Stylistically, I want to produce my wines in the classic Old World style, which is not easy because we also have very warm summers here.” That is the cellar problem in plain language. Tokara sits outside Stellenbosch, not in abstraction but on a slope with exposure, light, olive groves, indigenous fynbos, and the long view toward False Bay. Botha’s role is to make those conditions legible without letting ripeness take the whole sentence.

The method is less about display than control, especially in a region where summer heat can shorten the margin for judgment.

    Glass, stone, mountain, cellar

    The winery itself gives the work very little clutter to hide behind. Stone, full-length glass, and contemporary South African sculpture set a modern frame around the cellar door and tasting room; beyond it, Simonsberg, vineyard blocks, olive groves, fynbos, and False Bay hold the eye. The atmosphere is quiet, not hushed into ceremony, but calm enough for the wines to arrive with their edges intact. Natural light does some of the work in the room. So does distance. From the upper slopes, the place reads as both designed and exposed, a house of glass looking back at the conditions that shape its fruit. Tokara carries a current global ranking of 47, and Botha still has to answer each vintage with Tokara Cabernet Sauvignon, Chardonnay, Sauvignon Blanc, Syrah, and Petit Verdot.
