Pinotage kept close to the cellar

The cellar work turns on restraint before it turns on force. Abrie Beeslaar, winemaker at Kanonkop Wine Estate in Stellenbosch, has made that discipline the public face of the estate. His station is tied most closely to Pinotage, not as a gesture toward novelty, but as the grape through which the house reads the southern slopes of Simonsberg and the dry-farmed old vines rooted there. Beeslaar came to the cellar with a BSc degree in oenology and viticulture in 1997, then worked as winemaker at Kanonkop in 2002 and 2003 before taking charge of the wine direction from 2003 to August 2024. The estate now presents him as the maker most associated with Kanonkop Pinotage, Paul Sauer, Kadette, and the Cabernet Sauvignon bottling. The through line is not volume. It is line, structure, and the patience to let vintage speak without losing the house’s shape.

Old vines on decomposed granite

Kanonkop works from an estate-focused frame: 120ha of vineyards, old dryland parcels, and decomposed granite soils on Simonsberg. The varieties named here are Pinotage, Cabernet Sauvignon, Merlot, and Cabernet Franc, all moving toward still red wines with cellar life in mind. The method published around the estate is spare, but the emphasis is clear enough. Fruit comes from the place; the cellar’s task is to hold nerve, tannin, and proportion rather than polish them away. In Beeslaar’s hands, Pinotage carries the strongest signature, while Paul Sauer draws those grapes into a blend that sits inside the same discipline. He has spoken of vintage in working terms, saying, “The 2022 vintage is showing a lot of potential to become one of the greats.” It is a sentence shaped by harvest, not theatre.

The quiet side of Simonsberg

The tasting room sits within a classic estate atmosphere, with the vineyard and mountain doing much of the work the room does not need to perform. Kanonkop is quiet in the way serious cellars often are: not silent, but paced around the bench, the barrel, the glass, and the interval between them. The setting is the southern slope of Simonsberg, where natural beauty is not treated as decoration. It is part of the read. Guests encounter a house built around family tradition and an older register of Stellenbosch hospitality, elegant without asking to be called so. The cellar, the vineyard, and the tasting room remain tied by the same idea: estate reds made to carry time.

A house measured by accumulation

Beeslaar’s recognition includes International Winemaker of the Year in 2008, but Kanonkop’s stronger measure is the accumulation of vintages under a consistent hand. His own working line is plainer: “Just work harder than the rest.” That suits this cellar. The next glass here still returns to the same concrete nouns: Kanonkop Pinotage, Paul Sauer, Simonsberg, and the 2022 vintage.
