A measured hand in Panquehue

A small amount of bentonite is enough for Francisco Baettig, Winemaker at Viña Errázuriz in Panquehue. His cellar language favors limits: no enzymes during must clarification in the practice he has described at Vinos Baettig, and a preference for minimalist vinification over cellar display. At Errázuriz, that restraint sits inside a much larger house, one founded in 1870 by Don Maximiano Errázuriz and still tied to the Aconcagua Valley as a place of Cabernet Sauvignon, Carmenère, Syrah, Merlot, Petit Verdot, Chardonnay, Pinot Noir and Sauvignon Blanc.

Baettig's formation gives the work its technical spine. He trained at University of Chile and University of Bordeaux, then entered the demanding center of Chilean wine production, where scale does not excuse imprecision. He became head winemaker there in 2003, took on a further winemaking role in 2004, and today serves as technical director of the Errázuriz group while also holding chief winemaker posts at Viña Seña and Viñedo Chadwick. The through line is not ornament. It is judgment used repeatedly, across houses where the hand must stay steady.

Flagship fruit and cellar restraint

The estate's public identity still gathers around Don Maximiano Founder's Reserve, the historic founder's name carried into a flagship wine, and around the Max I vineyard on granitic soils. Those facts matter because they keep the program anchored in named ground rather than abstract house style. The Aconcagua Valley setting brings expansive vineyards moderated by Pacific breezes, and the cellar has to hold that breadth without turning it into weight for its own sake.

Baettig's stated method is spare: basic tools, minimalist vinification, and restraint even when the scale is large. That does not mean absence of decision. It means each intervention has to earn its place, from must clarification to the handling of still reds and still whites. At a conventional estate with a broad varietal range, discipline becomes a form of sorting. Cabernet Sauvignon and Carmenère do not ask the same thing of the bench as Chardonnay or Pinot Noir. The winemaker's work is to keep those demands legible in the glass.

Underground rooms, Pacific air

The place carries its age physically. Historic architecture frames the estate, while underground cellars used for hospitality bring visitors below the surface of the winery, closer to the cool, quiet register in which wine is stored and shown. The mood is classic rather than theatrical: stone, cellar air, and the slower pace of a house that has had time to gather its rituals.

Outside, Panquehue opens into the Aconcagua Valley, with vineyards spread under a climate tempered by the Pacific. The tasting room and the cellar sit within that larger geography, not apart from it. The work moves between vineyard, cellar and glass, with Don Maximiano Founder's Reserve as the clearest named thread through Viña Errázuriz.
