On the steep Pössnitzberg slopes, Erwin Sabathi works as winemaker at Weingut Erwin Sabathi in Leutschach with the vineyard still setting the first terms. Since 1992, he has held that rule inside a family business whose winegrowing line reaches back to 1650, a continuity measured by harvests, parcels, and the repeated discipline of deciding what not to obscure.

The estate itself is historic, with family winery roots given as 1698, but Sabathi does not treat age as decoration. His work sits in the present tense: organic farming, still white wines, and a focus on Sauvignon Blanc and Chardonnay shaped through site rather than ornament. The Sabathi name appears on bottlings that keep the place legible, including Sauvignon Blanc Ried Pössnitzberg Alte Reben, Chardonnay Ried Pössnitzberg Alte Reben, Chardonnay Ried Pössnitzberger Kapelle, Sauvignon Blanc Ried Pössnitzberger Kapelle, and Ried Saffran Chardonnay. Pössnitzberg as the method

The program turns on steep, hand-harvested vineyards and calcareous Opok soils in Südsteiermark, with Pössnitzberg carrying the most direct weight in the estate language. Sabathi works across a medium scale of 54-56 ha, large enough to require a steady cellar discipline and small enough for parcel distinction to remain the center of the conversation. Sauvignon Blanc and Chardonnay lead, with Welschriesling, Gelber Muskateller, Pinot Blanc, Pinot Gris, and Pinot Noir also part of the estate’s field of work.

The house offers single vineyard tasting and grand cru tasting, terms that make sense only if the cellar keeps differences intact. Alte Reben and Kapelle are not decorative words on these labels; they point back to vineyard age, slope, and a narrower reading of site. The production philosophy is organic, and the wines are framed as still whites with clarity and precision. Sabathi’s known recognition, Winemaker of the Year in 2016, belongs to him, but the more durable grammar of the estate is parcel, variety, soil, harvest, cellar.

A quiet cellar under steep slopes

The cellar sits amid a scenic, steep vineyard setting, refined without noise, with the kind of quiet that lets small movements register. In a winery like this, the tasting room does not need spectacle; the glass already carries slope, limestone, and the restraint of a house that keeps returning to the same question of place. The atmosphere is terroir-driven in the practical sense: the room, the cellar, and the vineyard point in the same direction.

Leutschach gives the estate its southern Styrian frame, while Pössnitzberg gives it contour. The work feels classic rather than preserved, rustic rather than rough, elegant because the hand stays close to the material. If there is theatre, it is the line from vineyard to cellar to poured wine, repeated until the gesture becomes almost quiet. The concrete noun at the end is Pössnitzberg.
