His guiding question is direct: “How can we write a new story for Central Coast wine, and how do we unlock its potential?” In Aaron Jackson’s work, that question reads less like a slogan than a regional brief. The focus stays on place, on what Central Coast wine can be made to say when the work is patient, local, and specific.
The Climb
Training at Cal Poly San Luis Obispo placed Aaron Jackson in close contact with the Central Coast before he ever made it his full-time subject. From there, the work started where many cellar careers do: in the vineyard and in part-time cellar labor, first as a vineyard worker at Unnamed vineyard near Paso Robles in the Paso Robles area and later as a part-time worker at Four Vines Winery. Those early roles grounded the technical side of the job in the day-to-day realities of growing and making. Today, Aaron is winemaker of Aaron Wines.
Today
The house style is stated plainly: “I’ve always sought the road less traveled, thus I choose to produce wines that break from conventionality.” That position is not framed as rebellion for its own sake, but as an insistence on working outside the expected lane.
Signature
Aaron's signature wines include Aaron Petite Sirah, Aaron Pettite Sirah, Akana Pinot Noir Seafarer, Akana Reserve Pinot Noir, and Aaron Mauka-claret. Taken together, they point to a winemaker working across different expressions while holding to a distinct point of view.

Recognition
From 2017 to 2021, Jackson was lead author of the San Luis Obispo Coast AVA application. That work places Aaron Jackson not only inside the making of Central Coast wine, but inside the paperwork that defines how the region is named and recognized. He has described the issue directly: “Our existing AVAs are so small that it's too hard to get recognition on a national level.” The point is straightforward: regional identity, for him, is not abstract. It is part of the trade.
