Adam Pawlowski

Polish by background, Adam Pawlowski built his reputation in wine service through repetition, standards, and floor discipline. At Northcote, a Michelin starred establishment in the North-West of England, he worked as a sommelier for 6 years, leading a very talented team of sommeliers while managing one of the best wine lists in the country. That combination — list management, team leadership, and service under pressure — is the base of the work that followed.

Since 2014, Pawlowski has worked across consulting, education, and judging, extending sommelier practice beyond the dining room. He serves as a tutor, examiner, and Board member of the Court of Master Sommeliers, roles that sit close to standards, assessment, and training.

Today, Adam Pawlowski’s work is defined by the professional side of wine: teaching it, testing it, and applying it in service.
