The Climb

Polish by background, Adam Pawlowski built his reputation in wine service through repetition, standards, and floor discipline. At Northcote, a Michelin starred establishment in the North-West of England, he worked as a sommelier for 6 years, leading a very talented team of sommeliers while managing one of the best wine lists in the country. That combination — list management, team leadership, and service under pressure — is the base of the work that followed. Since 2014, Pawlowski has worked across consulting, education, and judging, extending sommelier practice beyond the dining room. He serves as a tutor, examiner, and Board member of the Court of Master Sommeliers, roles that sit close to standards, assessment, and training.

Today

Today, Adam Pawlowski’s work is defined by the professional side of wine: teaching it, testing it, and applying it in service. As a tutor, examiner, and Board member of the Court of Master Sommeliers, he works inside an institution built around precision and consistency. His role as judge of the Decanter Wine Awards and his membership in the Polish Sommelier Association keep him active in both international evaluation and his national trade community. The field he works in is broad, but his reference points remain practical: tasting, service, and people who take the work seriously.

Wine list curation is the clearest thread in Pawlowski’s work. It is a technical task, but also an editorial one: building structure, keeping balance, and making sure the list serves the room rather than just the cellar.
