i. Biography
Adolfo Santos García led the kitchen at Saddle, a Madrid restaurant that holds 1 Michelin star and 2 Repsol Suns, located in the former Jockey space, until 2024; he is now executive chef and consultant at Forbes House in Madrid. Originally from Barco de Ávila, he studied at Escuela Jorge Santayana and advanced through roles at El Chaflán, Santceloni, and as head chef at Lakasa for five years before opening Saddle in late 2019. In 2024, he was awarded Best Chef at the 13th Premios Revista Club de Gourmet.
