i. Biography
Originally from Barco de Ávila, he studied at Escuela Jorge Santayana and advanced through roles at El Chaflán, Santceloni, and as head chef at Lakasa for five years before opening Saddle in late 2019. In 2024, he was awarded Best Chef at the 13th Premios Revista Club de Gourmet.
