The Climb
That kind of entry point teaches the floor before the pass: the pace of service, the physical rhythm of a kitchen, and the difference between movement and production. From there, O'Neal moved into the kitchen as chef at Au Pied de Cochon in Montreal (from 2005), where the work tightened and the demands of line cooking became the basis of the craft. By 2010–2015, O'Neal was overseeing culinary operations at M. Wells restaurants Diner, Dinette and Steakhouse in New York City, a role that asked for consistency across multiple rooms and the ability to hold a standard at scale. At Café Altro Paradiso, O'Neal served as Head Chef from 2015–2017, a stretch that marked a shift from managing existing systems to refining their own approach inside a restaurant of their own making. From 2017, O'Neal became chef and partner of Chez Ma Tante, and from 2019, chef and partner at Le Crocodile in Brooklyn. Those posts moved the work from execution into partnership, where the craft includes shaping the room as well as the plate.
