Aitor Zabala is a Spanish chef from Barcelona who is the chef/owner of Somni in West Hollywood, where he led the restaurant to three Michelin stars in 2025. Somni originally opened in Beverly Hills in 2018, first as a José Andrés-associated project, and reopened in West Hollywood in 2024 under Zabala’s ownership. He is also identified in reporting as a longtime member of José Andrés’ ThinkFoodGroup, with a decade as Creative Director before opening Somni.
