i. Biography
Born in Seoul, Korea, and now American, Akira Back built his name through movement between disciplines: the professional snowboarding circuit, then kitchen work, then chef and brand owner. The throughline is control under pressure. Across Akira Back restaurants, his work is known for innovative interpretations of Japanese and Korean cuisine, with precision held against a distinctly personal point of view.
The Climb
Before the kitchen, the Professional snowboarding circuit set the terms: timing, balance, and nerve. Akira Back brought that same discipline into food in Aspen, Colorado, where he entered Kenichi in 1993 as a sushi prep cook. The role was built on repetition and exactness, the sort of foundation that shapes technique quietly over time. From there, he moved to Kona, Hawaii, becoming opening chef at Kenichi, a step that widened the scale of his work and began to define the larger identity he would build. Today, Akira Back is chef and brand owner of Akira Back restaurants, and chef/restaurateur of Yellowtail Japanese Restaurant & Lounge since 2008. Those roles show how a personal name can be turned into a working culinary platform, one that travels across venues while staying anchored to a consistent sensibility.
Today
His cooking centers on innovative interpretations of Japanese and Korean cuisine, often described as Japanese cuisine with a Korean twist. The phrase points to a useful working method: familiar forms, reworked with contrast and pressure rather than left intact. In Akira Back restaurants, that approach gives the brand a clear identity without flattening the individual choices behind it. The Time Capsule menu is one of the clearest expressions of that method, using courses that represent different eras of his life in food. It reads less like a standard tasting and more like a sequence of reference points, where each plate marks a stage in a working career. The result is a menu built around movement, memory, and revision. His own line about change fits that structure plainly: “Chefs evolve just like ordinary people; I'm not the same as I was twenty or thirty years ago.” For a cook whose path runs from sport to prep work to opening kitchens and brand-building, it lands as a practical statement about how a body of work changes over time.
Signature
Akira's signature dishes include Dosa and Time Capsule menu. Together, they show two sides of the same practice: one rooted in form and recall, the other built as a conceptual framework, both shaped by a chef working through texture, narrative, and surprise.
In Their Words “Chefs evolve just like ordinary people; I'm not the same as I was twenty or thirty years ago.” “Man, that’s not my style, I have to do something different.”
