Executive chef of Magistracy Dining Room in Hong Kong, Alyn Williams has worked through kitchens where pace, precision, and repetition do the shaping. Raised in East London, he settled on cooking early, saying, “I decided to cook as a profession when I was about 14 or 15.” That decision reads less like an anecdote than a point of discipline: the work was chosen young, then carried forward with the kind of consistency that professional kitchens reward.
