i. Biography
Anthony Walsh is the Corporate Executive Chef of Oliver & Bonacini Hospitality, where he oversees the culinary direction of the company’s restaurants, event spaces, and catering operations. He has been with Oliver & Bonacini since the opening of Canoe in 1995, where he started as a saucier and later rose to executive chef before moving into his current corporate role. Walsh has also been publicly tied to the launch and culinary direction of projects such as Léo in Mont-Tremblant and Aera in Toronto.
