Antimo Dimeo’s work is rooted in the most direct form of culinary training: the family pizzeria. In the Greater Philadelphia area, he learned the pace and precision of Neapolitan pizza from the ground up, starting as soon as he was allowed to work. That experience carried into Arde Osteria in Wayne, Pennsylvania (2012), where a cook role gave structure to an approach already grounded in hands-on Italian cooking.
