i. Biography
Arnaud Magnier has been owner and executive chef of Restaurant Clairefontaine in Luxembourg since 2001, a role that has given shape to a career built on discipline, precision, and an insistence on directness. He began his path in Mâcon at Rocher de Cancale after earning his diploma, and from the outset his standard was as unsparing as it was simple: "If I had only one thing to cite, it is honesty."
Coming Up
Arnaud Magnier’s early years were forged in the disciplined rhythm of classic French kitchens, where each step seems to demand both humility and stamina. He started as 1st kitchen commis at Le Rocher de Cancale in Mâcon (71) (1986–1988), then moved on to la Diligence in St Julien en Genevois (74) (1988–1989) as 1st kitchen commis, before taking on the role of 1st rotating commis at Le Grand Ecuyer in Cordes (81) (1989). From there, he became Commis de cuisine at La Côte d’Or in Saulieu (21) (1989–1991), a formative period that sharpened the rigor behind his approach. His Service National at Palais de l’Elysée in Paris 8ème (1991–1992) followed, adding another layer of formal experience to a path already marked by steady advancement. He returned to La Côte d’Or in Saulieu (21) as 1st chef de partie (1992–1993), then stepped into the heightened responsibilities of Sous Chef at La Pyramide in Vienne (38) (1993–1994). The ascent continued at La Barbacane in Carcassonne (11) (1994–1996), where he served as Sous Chef before moving into broader leadership. By 1996, Magnier had become Head Chef exécutif at Le Chêne in Gargas (84) (1996–1998), then at Tante Louise in Paris 8ème (1998–2000), refining a style that would later become closely associated with restraint and exacting execution. Since 2001, he has been propriétaire - Head Chef exécutif of Restaurant Clairefontaine, while also serving as membre of Eurotoques since 2001.
Where They Are Now
Since 2001, he has led the Luxembourg restaurant as owner and executive chef, shaping Restaurant Clairefontaine with the same steady, unsentimental clarity that has long defined his work. His cooking is presented not as ornament, but as a careful act of selection and emphasis, with product remaining the starting point and the destination. That philosophy is visible in a chef video recipe from 2021, which featured his pavé de cœur de saumon en deux cuissons, dernières asperges vertes et vinaigrette de pommes de terre, salade poivrée. The dish reads like a statement of intent: salmon handled with precision, asparagus kept vivid, potato vinaigrette lending depth, and peppery salad bringing a final sharpened note.
In Their Words “I am not a machine, but I am a chef who does the best he can with his know-how, without ever lying to the customer.”
