At Arndt Köbelin Weingut in Eichstetten, the cellar is run with precision rather than flourish. Since 2005, Arndt Köbelin has owned the family winery with his wife Monika, and that ownership carries the practical weight of continuity: a working estate, a fixed standard, and a cellar master whose job is to hold the line from vintage to vintage. His measure is direct: “My wine must intensify the desire for the next sip.”

Where They Are Now

The cellar work at the estate is shaped by restraint, exacting control, and a close reading of place. As cellar master, Arndt Köbelin keeps the focus on how the wines finish and how the Kaiserstuhl registers in the glass. “In our wine, the whole power of the Kaiserstuhl is present in the bottle,” he says, and the line fits the method: concentration over embellishment, structure over display.
