i. Biography
Before Ashwin Vilkhu became Head Chef at Saffron in New Orleans, two kitchens had already done the essential work: the one in his parents’ catering company, Saffron Caterers, and the one at the University of New Orleans. The first taught hospitality as labor and gesture, where food was built to welcome, mark a celebration, and hold attention in a small space. As Vilkhu has said, "My parents wanted to make people happy. It was a tiny house, but they were doing five-star entertaining." That pressure-tested setting—tight quarters, polished output, constant service—became part of the foundation for a restaurant practice that keeps Indian cuisine in motion, using refined technique, modern precision, and a restless sense of invention.
