Aurélien Jousseaume is the chef and proprietor of L'Envers du Décor in Les Herbiers, Vendée, where he opened his own gastronomic restaurant in September 2016 after years spent building experience in starred and well-known restaurants. He is a "Jeune Chef Espoir de l'année 2013" and says his cooking is rooted in French terroir and the Vendée region.
