The early training is split between Bordeaux and Spain, and that pairing set the base for Aymeric de Gironde’s work in wine: one side anchored in Bordeaux’s established culture, the other in Spain’s distinct viticultural tempo. From the start, the craft was framed by study and by exposure to more than one wine language, which is visible later in a career that moves across markets and estates without losing its centre. From 1997, selling wines and spirits at a US-based company in New York put Aymeric de Gironde on the commercial side of the trade, where product knowledge has to travel through service, timing, and market pressure. That was followed by work at LVMH (Hennessy and Krug) in France, a setting associated with exacting standards and disciplined brand stewardship. The executive path continued at Château Cos d’Estournel in Bordeaux, where Aymeric de Gironde served as CEO until 2017. Since 2017, he has been director and general manager of Château Troplong-Mondot, extending a career built through positions that require both operational control and a clear read on place.

Where They Are Now

At Château Troplong Mondot, the work is organized around precision viticulture and very minimally intrusive winemaking, with the stated aim of revealing the origin and uniqueness of the terroir. The method keeps attention on the vineyard and limits intervention in the cellar, so the site remains the primary source of definition. That produces a Terroir-driven Saint-Émilion wine shaped by precise vineyard work and a restrained, nuanced style. Under Aymeric de Gironde, Château Troplong Mondot is positioned through calibration rather than excess, with the emphasis on clarity, place, and the details that give the wine its identity.
