Bastien Salvatge’s work sits at the point where classical training meets the less tidy discipline of ownership. Since 2024, he has been chef-owner and co-manager of Cuq en Terrasses in Cuq-Toulza, France, a role that extends beyond plating and service into timing, staffing, and the daily decisions that hold a house together.
The Path
Hotel school of Souillac gave Salvatge the technical base that defines his early formation: rigor, technique, and refinement. From there, he moved into service as second chef at Py’R in Toulouse, a post that would have required precision, support for the pass, and consistency under pressure. Cuq en Terrasses became the next stage in that progression, and in 2024 Salvatge stepped into it as chef-owner and co-manager. The shift marks a clear change in responsibility: from building experience inside someone else’s operation to carrying the decisions, standards, and pace of a place he now helps run.
