From a small fishing village on the north coast of New South Wales to Copenhagen, Beau Clugston’s route has followed the pull of fish, shellfish, and cold northern water. The boy who dived for oysters and cooked what he caught became a chef at Noma in 2010, then carried that seafood focus into Iluka in 2018, where he is chef and owner.
Early Years
