Training at Cal Poly University gave Bill Wathen the framework; vineyard work gave him the practice. Farming vineyards at Louie Lucas and later serving as vineyard manager at Chalone Vineyard placed him in the routines that shape wine before it reaches the cellar: reading sites, working through seasons, and keeping handling measured. Those early posts fed the discipline that would define Foxen Vineyard and Winery, where his approach settled into a simple working principle: fewer fingerprints, more trust in the vineyard.
Where They Are Now
Since 1985, the founder & director of winemaking role at Foxen Vineyard and Winery has been built around restraint. At Rancho Tinaquaic in the Santa Maria Valley, Bill Wathen has kept the cellar in a supporting position, letting vineyard character lead the work. The method is direct: respect the vine, avoid unnecessary intervention, and allow the wine to arrive with as little handling as possible.
