The Path

Technical grounding for cellar work came through Fresno State University and California State University, Fresno, where Bob Cabral built the practical base for a California wine career. That kind of education matters in a trade where judgment is repeated vintage by vintage: observation, timing, and correction under real cellar conditions. California winemaking experience followed through roles as winemaker at De Loach, winemaker at Kunde, winemaker at Alderbrook, winemaker at Hartford Court, and director of winemaking at Williams Selyem in Russian River Valley, Sonoma, California (1998–2014). Across those appointments, the work stayed close to core cellar questions: picking decisions, fermentation guidance, barrel use, and the degree of intervention needed to keep fruit and structure in proportion. The Williams Selyem years in Russian River Valley, Sonoma, California (1998–2014) placed that work inside one of California’s most closely examined Pinot Noir settings. For Bob Cabral, the period centered on nuance: texture, aromatic lift, ripeness held against freshness, and bottles built to show both early clarity and patience. Today, Bob is Pinot Noir winemaker of Valette Wines, continuing work within the same varietal frame.

The Work Today

Bob Cabral Wines, founded in 2015, now concentrates on Pinot Noir, Chardonnay, Riesling, and Rosé of Pinot Noir. Pinot Noir remains the specialty and the organizing point of the label, while Chardonnay, Riesling, and Rosé of Pinot Noir extend the work across white, pink, and red wines without leaving the same demand for clarity and control. The cellar language is balance: land and hand, barrels and battonage, wisdom and wine. In practice, that means restraint in handling, attention to barrel cadence, awareness of lees, and enough control to let fruit keep its shape. The goal is continuity between place and finished wine, not cellar work that announces itself first. The same working vocabulary continues through outside roles. Alongside his own label, Bob Cabral is Co-Winemaker at Bricoleur Vineyards in Windsor, California. He also does project work with Summer Dreams Winery and serves as Pinot Noir winemaker for Valette Wines.

Signature

2007 Litton Estate Pinot Noir. The bottling is identified by estate and vintage, the two markers Pinot Noir often uses to show its working conditions most clearly. In Bob Cabral’s body of work, it sits inside a larger argument for attentiveness to fruit, timing, and the structure of the finished wine.
