Raised in the northern suburbs of Cape Town, Boela Gerber has built a winemaking practice around restraint, site, and close listening. The line he gives for Groot Constantia — “I merely use what Groot Constantia’s terroir offers me” — says enough about the method: let place lead, keep the hand light, and work with what the vineyard gives.
The Path
Training at Stellenbosch University gave Boela Gerber the foundation for cellar work, before the more physical side of the trade took over. He served as cellar master at Stellenzicht until 1998, a post that sharpened his understanding of how wine is shaped well before bottling. He then moved to Rickety Bridge as winemaker and vineyard manager, combining cellar responsibility with vineyard oversight and adding another layer of practical control to the craft. Since 2001, Boela Gerber has been winemaker of Groot Constantia. The role places him inside one of South Africa’s longstanding estate names, where consistency matters as much as expression. His path — Stellenbosch University, Stellenzicht until 1998, Rickety Bridge, then Groot Constantia — reads as a steady accumulation of cellar discipline, vineyard knowledge, and site-led judgment.
The Work Today
At Groot Constantia, the work remains grounded in the estate’s long tradition, with Boela Gerber keeping his own presence deliberately modest. “I am but a cog in the wheel,” he said, which fits a cellar approach built around function rather than display. When asked to name a favourite, he chose “the 2013 Gouverneurs Reserve!”, a direct answer that points to an attachment to particular vintages as much as to the broader house style. That same approach is set out plainly in his own words: “I merely use what Groot Constantia’s terroir offers me.” It is a practical line, and a useful one for any winemaker working from site rather than formula. The estate’s wines are described as award-winning, and his method aligns with that: clarity of expression, measured handling, and fidelity to what the ground provides.
