The Path
More than two decades at Buitenverwachting Wine Farm in Cape Town, South Africa have given Brad Paton a cellar practice built on judgment as much as technique. Since 2004, he has served as Head Winemaker and cellarmaster, with the work framed by selection, not excess: deciding which bottles earn release and which do not. The standard is explicit in his own words: “If I don't believe in the wine, I don't put it in the bottle.”
The Work Today
