i. Biography
Bruno Verjus, born in 1959 in Roanne, France, is a self-taught chef who transitioned from careers in medicine, advertising photography in Los Angeles, and entrepreneurship in China to open his first restaurant, Table, in Paris's 12th arrondissement in 2013 at age 54. Prior to that, he ran a small operation from his home on Île d'Yeu in 2012 and trained informally with figures like Alain Passard and Frédérick Ernestine Grasser Hermé. Table earned its first Michelin star in 2018, a green star for sustainability in 2020, and a second star in 2022, and was ranked 10th on The World's 50 Best Restaurants list in 2023 as the highest new entry.
