Coming Up
Training at the Institute of Culinary Arts set the base for Callan Austin’s progression through service-led kitchens, first as Chef de Partie at Le Coin Français in Franschhoek and then as Junior Sous Chef at Chefs Warehouse at Tintswalo Atlantic. The line from Jeffreys to Franschhoek to Stellenbosch reads less as a résumé than as a study in discipline, with each stop adding pressure, pace and control to the work. Since 2022, DUSK in Stellenbosch has been the platform for that approach, with Austin as co-founder and Executive Chef. In 2024, DAWN joined that picture as a second founding role, extending the same attention to seasonality, creativity and storytelling through food.
