The Path

Culinary training at Culinary Institute of America gave Carlton McCoy a foundation in timing, flavor, repetition, and service pressure before his work moved fully into wine. For an artisan reading the résumé, that matters: the palate was not built apart from food, and the service view was not built apart from the room. Wine direction at The Little Nell placed McCoy inside a hospitality setting where cellar depth, guest expectation, and service tempo had to function together. The role was not only selection; it required reading guests, managing occasion, and making wine legible without reducing it to performance. Later, as manager of Wine Operations at Heitz Cellar and other winery properties, the work moved further behind the label into the practical responsibilities that support estate wine. Estate leadership now gathers those earlier trades into one operating view. As Managing Partner and ceo of Lawrence Wine Estates and owner of Stony Hill Vineyard (since 2020), Carlton McCoy’s work sits across kitchen knowledge, service discipline, winery operations, property stewardship, and organizational leadership.

The Work Today

Today, McCoy is Managing Partner at Lawrence Wine Estates in Napa Valley, California. Leadership in a wine estate is measured through teams as much as through bottles. McCoy’s own standard is direct: "We pick good people and want them to realize their own potential." In Napa Valley, that places the work at the level of land, staff, property history, daily decisions, and the culture that surrounds production. The people side is not separate from the wine side here. Training, access, responsibility, and welcome shape the field that produces and serves wine. The cellar remains central, but the working culture around the cellar determines who enters, who stays, and who is trusted with the next decision.

Signature

Carlton's wine focus include Nomad with Carlton McCoy and Dazed and Confused. Those projects use wine as a point of entry rather than a closed technical language. The emphasis is context: place, culture, and the conversations that form around a glass. The signature is therefore less a fixed style than a working method, with wine used to read where people are, what they make, and how they gather.

Acclaim

Board service in food and wine institutions marks how craft practice can move into field-level responsibility. McCoy serves on the James Beard Foundation Board of Trustees, connecting his estate and hospitality work to a national food organization. Service on the Court of Master Sommeliers Diversity Board extends that responsibility into questions of access and representation in wine. For a career built through culinary school, restaurant and hotel service, winery operations, and estate leadership, the board work keeps the focus on who is trained, who is seen, and who gets a durable place in the trade.
