Cédric Bruneau is the chef and owner-chef of Fezi, a restaurant in Rennes, where he has operated since its opening in March 2020 and is leading a market-driven, locally sourced bistronomic kitchen. He was previously a second at Holen in Rennes, an étoilé restaurant, and earlier worked in restaurants in Limoges and Lille.
