Formation
Sichuan restaurant work in Sichuan province, China (2005–2008) gave the craft its early frame for Chen Kentaro: heat management, timing, and precision inside a regional kitchen discipline. The same line of practice carries into Shisen Hanten, Singapore, where he has led the Singapore outpost since 2014.
The Practice Today
Accessibility in a Sichuan restaurant context depends on control rather than dilution. In 2017, Chen Kentaro opened Chen’s in Singapore, stating, “I believe that food should be both authentic and accessible.” Across those points, the work is measured by respect for tradition, precision in technique, and the service goal of making people happy through every dish.
