Training at University of British Columbia Wine Research Centre and University of Adelaide gave Cherie Spriggs the formal framework behind a career built on precision, patience, and control. Those studies matter here because the work asks for technical consistency before it asks for style. Since 2007, she has served as Head Winemaker of Nyetimber, where that discipline is applied across vineyard and cellar decisions.

Where They Are Now

At Nyetimber, winemaking under Spriggs is methodical by design. She and her team assess each vineyard individually, reading site by site before deciding on harvest timing. The process continues with gentle pressing, traditional method production, long ageing, and extended post-disgorgement time, a cellar rhythm that relies on restraint rather than speed. The wines that come out of that system are built step by step, with each stage given the time it requires. That approach is also tied to clarity and consistency in English sparkling wine. On the category’s future, Spriggs has said, "I think there will be many more people trying out English sparkling wines." It is a measured view, and one shaped by years spent working inside the category as it has matured.

Cherie’s signature wines include Classic Cuvee, 1086 by Nyetimber, and Rosé Multi-Vintage. Taken together, they show the range of her work at Nyetimber: a house style grounded in precision, with room for nuance, texture, and lift.
