The pattern is clear: this is a career built in harvest conditions, where the work is seasonal, compressed, and unforgiving of loose attention. Since 2017, Chloi has been winemaker (harvest work) of Chatzivaritis Estate, where the busiest days of the year sit at the center of the job. Harvest work demands speed without drift, and the role places her in the part of winemaking where decisions cannot wait and every move has a consequence.

Today

Her current title is Chief Winemaker, which places Chloi Chatzivariti in charge of the estate’s cellar work. In practical terms, that means guiding the production from intake to final decision-making, with responsibility that extends across the full run of the wines.

Minimus Xinomavro PGI is one of Chloi Chatzivariti’s signature wines, and it sits as a direct expression of the work she has done at Chatzivaritis Estate. A named wine like this is the clearest evidence of a winemaker’s handling of the grape, the cellar, and the decisions that shape the final result.
