The Climb

Christoph Wachter’s early years at Weingut Wachter-Wiesler in Deutsch Schützen, Südburgenland, Austria (2008–2010) functioned as apprenticeship by repetition rather than by theory: work close to the vineyard, close to the cellar, and close to the habits that form a winemaker’s judgment. The family winery gave him a practical base in the trade, with enough contact time to learn how pace, observation, and restraint shape the work. Since 2010, he has been the head winemaker of Weingut Wachter-Wiesler, carrying that continuity forward from the same house.

Today

Blaufränkisch and Eisenberg DAC wines anchor Christoph Wachter’s current work, and that focus gives the cellar a clear point of reference. The wines sit in a line where place, balance, and definition matter more than noise. His approach reads through those bottles in a direct way: composed, site-led, and built around clarity of character.

Signature

Christoph's signature dishes include Blaufränkisch Weinberg, Blaufränkisch Eisenberg DAC Reserve 2021, Bela-Joska, and Steinweg. Taken together, they describe a wine language built on precision rather than excess, with vineyard identity and cellar detail kept in view. The names carry the work itself: specificity, continuity, and a steady relationship to place and vintage.

In Their Words “Braised cheek from the “Zickentaler Moorochse”; these are Angus- and Galloway oxens grazing on the peatland meadows of the Zickenbach, just a few miles away. Together with my Blaufränkisch Weinberg this is a really autochthon dish!” The pairing is exact and local, with no need for ornament: a regional cut, regional grazing, and a wine that answers in the same register. In Christoph’s own terms, the value is in fit—the way food and Blaufränkisch can meet on the same ground and speak the same place-language. “My practical work with Dirk Niepoort at his Quinta de Nápoles in Portugal’s Douro Valley in 2009. Recognition

The cellar soundtrack runs from rock to house. "Whatever I like to hear I play in the cellar and this is mixed from rock to house, sometimes smooth, sometimes hard." It suits the pace of the room: changing register without losing control, and keeping the work alert rather than ceremonial. The music is part of the atmosphere, but it also matches the method—varied in texture, steady in intent.
