In Walla Walla Valley, site selection is the way a wine is read in the glass: slope, soil, exposure, and seasonal pressure carry the work before cellar decisions do. Christophe Baron has described his connection to that ground as a "romantic scene," but the practical claim is viticultural: the land is not background for Cayuse Vineyards, it is the working material.
The Climb
Burgundian training puts vineyard first, then cellar. Beaune, Burgundy and Dijon supplied Christophe Baron with that frame: viticulture as discipline, place as constraint, and tradition as a set of working references rather than decoration. In 1997, that training moved into Walla Walla Valley with the founding of Cayuse Vineyards, where Baron took the roles of owner and vigneron. The same vineyard-led register also carries through Bionic Wines and Champagne Christophe Baron.
Today
Cayuse Vineyards remains the central Walla Walla Valley project in Christophe Baron’s work, with the vigneron role tied to farming, site expression, and bottlings built around place. Pinot Meunier is a specific point of focus in his Champagne work: Les Hautes Blanches Vignes received a 96-point rating from Antonio Galloni of Vinous, placing that bottling within the critical record as well as the cellar record.
