Christophe Baron, winemaker at Horsepower Vineyards in Walla Walla, keeps the work close to the ground, where Syrah and Grenache begin as farming before they become cellar decisions. Horsepower uses draft horses to work the vineyards, a traditional, labor-intensive practice tied to Baron’s Champagne roots and to his belief that site should set the terms.

Baron’s training in Beaune, Burgundy and Dijon gives that choice its frame. Burgundy puts the vineyard before the cellar, and his Walla Walla work has followed that order since he founded Cayuse Vineyards in 1997 as owner and vigneron. At Horsepower Vineyards, his role is stated plainly: winemaker. The craft here sits between inherited method and local constraint. Baron’s broader work in Walla Walla is known for site selection, with slope, soil, exposure, and seasonal pressure treated as working material rather than scenery. Horsepower narrows that language into a vineyard practice that can be seen before it is tasted. The vines stand in quiet, well-drained ground; the cellar follows what the season permits.
