The Ascent
Pastry training in this line starts with disciplined repetition before it reaches hotel service, boutique production, or international retail. Christophe Michalak trained at the Trade School of Angers, then worked as Pastry Chef at the Hilton in both London and Brussels from 1991 to 1993. The sequence that followed put the craft through several formats: Hotel Negresco in Nice from 1993 to 1995, Fauchon in Paris until 1997, Kobe in Japan (1997–1998), Pierre Hermé in New York (1998–1999), Ladurée from 1999 to 2000, and Paulette Macarons in Beverly Hills, California, in 2007. Palace pastry asks for consistency, finish, and production control under daily scrutiny. Since 2000, Christophe Michalak has been Pastry Chef at the Plaza Athénée in Paris. In 2013, the work expanded into a more public-facing format with the pâtisserie Takeaway and the pâtisserie's Master Class, extending the same pastry vocabulary into retail and teaching without separating it from service practice.
Present Day
Modern portable pastry is the working frame for the pâtisserie, established in Paris by Christophe Michalak. The format favors pieces that travel, package cleanly, and eat easily, with attention to true taste, less sugar, and natural ingredients. The construction often uses a cookie or cheesecake crust base with layered inserts and mousses. The stated position is not to treat pastry as a museum object, but as a daily-life product shaped by contemporary habits.
Signature
Signature pastries include Kosmik, Fantastik, and Koonies.
